Peanut butter cookies


Resepnya copas dari blognya mba Vania, yang berisi semua makanan enak......ternyata enak banget, yang biasanya hubby gak terlalu suka cookies2 an ternyata lagi-lagi dan lagi he..he... Sebenarnya aku bikinin cookies ini, karena ngiler dan juga little boy gak ada bekal sekolahnya, jadi malem2 bikin dech, karena males ngeluarin mixer, jadi semua bahan masukin aja dalam food processor. Untuk coklatnya yg akau bikin ini pake Dark Chocholate Cooking yang aku potong-potong sendiri, sesuai resep pake 1/2 cup, tapi next time banyakin dikit lagi biar coklatnya lebih terasa.


PEANUT COOKIES
3/4 cup butter, softened
1/2 cup peanut butter
1 cup granulated sugar ( yeni used 1/4 cup garnulated sugar )
1/2 cup packed brown sugar *
1 tsp baking powder
1/2 tsp baking soda
2 eggs
1 tsp vanilla
1 1/4 cup all-purpose flour
1 1/2 cups quick-cooking rolled oats
1/2 cup chopped peanuts
3 ounces bittersweet or semisweet chocolate, coarsely chopped (1/2 cup) **
1. Preheat oven to 375 F.
2. In a large mixing bowl beat together butter and peanut butter with an electric mixer on medium speed for 30 seconds. (jangan terlalu lama dimixer kalo gak pengen cookie 'beleber' di oven)
Beat in sugars, baking powder, and baking soda until combined.
Beat in eggs and vanilla.
Beat in as much of the flour as you can with the mixer.
Stir in any remaining flour, the oats, peanuts, and chocolate with a wooden spoon. Drop dough by rounded teaspoon about 2 inches apart ounto ungreased cookie sheets.
3. Bake the preheated oven for 10-12 minutes or until edges are firm and tops are golden. Cool on cookie sheets for 2 minutes, remove and cool completely on wire rack.
To store: Place in layers separated by wax paper in an airtight container; cover. Store at room temperature up to 3 days or freezer up to 3 months.
